My partner and I are fairly new to birding and are planning a holiday to Europe for a week in July. Ideally we'll divide it between relaxing by pool/beach in the sunshine and birding. Can anyone recommend where to go? We'd especially like the possibility of seeing vultures and eagles. Any suggestions would be great.

I would be a bit more adventurous and go to Gambia. Not too expensive (probably cheaper than most of Europe). You'll get sun relaxation and some superb birds without having to travel.
South-west Spain, preferably beyond Marbella.
Go inland only slightly for the vultures & eagles.
